Since the Easton FX2 is one-piece bat the Easton FX1 is two-piece what is the performance difference?

The Easton FX2 will have a stiffer feel. As the Easton FX1 will have a flex to it's swing making it feel a lot lighter.

My girl has a 31" 21 oz. Stealth now and hits in the 4 hole. She hit .401 last year but grew a lot. We need a 32" maybe a 33" bat. She likes the yellow bat but it's a -9, what would be best?

The 2013 Easton FX2: FP13X2 Fastpitch bat would be a great selection. At -9, I would suggest a 32" 23 oz. It will give her an extra inch compared to her last bat, but add two oz. The extra weight will add some power to her contact with the ball.

I'm not sure what bat to buy my daughter. She has fast hands and hits the ball hard and makes contact almost all the time and she occasionally hits a home run. She wants a one-piece bat is not sure if we should stay with minus 10 or switch to minus 9?

The 2013 Easton FX2: FP13X2 Fastpitch has a slight end load to the bat. Which will slow down her bat speed. So, please put that into consideration when choose the size. If you add a end load to the bat and then add more ounces it could be too heavy. If she is more of a line drive hitter, maybe you should go with the Easton FS2. It is more balanced and a easier swinging bat.
